Cooking Steps
Follow these instructions in order.
- 1
Prepare the ingredients by cutting an onion into wedges and chop the spring onions thinly. Cut the sliced beef into smaller, bite-sized pieces so they are easy to eat.
- 2
Make the Broth. In a large pot, combine the sauce ingredients: Water, Dashi powder, Soy Sauce, Honey, Grated Ginger. Bring this mixture to a boil.
- 3
Once the broth is boiling, add the onion wedges into the pot.
- 4
Turn the heat down to very low. Add the beef strips one by one. Simmer for about 5 minutes until the meat is no longer pink, skimming off any foam that rises to the surface.
- 5
Serve. Scoop the beef and onions over a hot bowl of rice. Top with the spring onions, pickled red ginger, and Japanese chili powder.
- 6
Make Soft boiled egg: Boil 1.5L of water, turn off the heat, stir in a mixture of potato starch (1 tbsp) and water (3 tbsp), then gently drop in 4 eggs. Cover and let sit for exactly 15 minutes.
